To start this blog out on a tremendous high, here is the ever desirable best NY Pizza recipe I have ever come across to date:
Dough:
2 1/4 teaspoons (one package) active dry yeast
1 c. lukewarm water
1 1/4 c. Ice cold water
1 tsp sugar
1 TBSP salt
2 TBSP Olive Oil
5 1/4 - 5 1/2 cups unbleached bread flour plus more for dusting
Put yeast in warm water and set aside. Mix Ice water, sugar, salt and olive oil. Place in flour. Add yeast mixture. Knead until elastic. Divide in three pieces and knead into balls. Place in Ziploc bag in the fridge for 10 minutes (or up to 2days). Take out and stretch out your dough. Best dough for flinging into the air I have ever seen.
Sauce:
1 can 14.5 oz diced tomatoes
1 can 6 oz Tomato Paste
1 1/2 tbsp Extra virgin olive oil
2 Tbsp chopped fresh basil leaves or 2 tsp dried basil
1 1/2 tsp dried oregano
1 1/2 tsp sugar
1/2 tsp minced garlic
3/4 tsp salt
Add whatever toppings you desire. A popular one is ricotta cheese, spinach, Tomato slices, and cut mozzarella circles.
Pizzas bake at 500 degrees F for 10 minutes.
Tip on the Basil: I just bought a Basil plant. It was $3.50 and the pot was a dollar. I don't know how much it is at the store but I bet it is about that and doesn't replenish itself as my little plant does. I am very excited. I have just become an avid supporter of Herbal gardens.
